2. Jinhua Ham is a specialty of Jinhua City, Zhejiang Province, and is a nationally recognized geographical indication product. It boasts a bright red color and a savory yet not greasy flavor. Cured pork, known as "bacon pork," is produced both in the north and south of China. In the south, it primarily features bacon made from pork, while in the north, it's made from bacon beef. Moreover, due to variations in origin and processing methods, the texture of bacon can differ.

Is Jin Hua ham cooked meat?

Not cured meat. The preparation method of Jinhua ham is similar to bacon. Both are directly cured with raw meat and seasonings like salt, hence they are uncooked. We must cook them before consumption. Most varieties are smoked hams and have not yet fully become ready-to-eat products, so it is not recommended to eat them raw. However, local manufacturers also state that the product can be eaten raw for over three years.

Should you soak Jin Hua ham before eating it?

Soak it first. Jinhua ham is a very hard cured meat product, which is heavily salted during the production process, making it extremely salty. Soaking in water not only helps to soften the meat but also makes it easier to clean; it can also force the salt out. Some of the saltiness in the ham enhances its flavor, so it is recommended to soak it in water before consumption.
