Modified Atmosphere Storage, also known as controlled atmosphere storage, involves regulating the gas composition within a cold storage to control temperature, carbon dioxide, humidity, oxygen concentration, and ethylene levels. This suppression of respiration in fruits and vegetables and slowing of their metabolic processes is achieved. While the installation of a modified atmosphere storage facility may appear similar to that of a cold storage, there are significant differences in architectural design and operational management compared to high-temperature cold storage installations. Modified atmosphere storage facilities are developed on the basis of high-temperature cold storage. Safety valves and gas adjustment bags must be installed during the setup of a modified atmosphere storage. The facility must control the timing of incoming and outgoing goods, with shorter time to reach modified atmosphere for fruits being preferable. The installation should consider the need for rapid loading, door sealing, and gas adjustment to meet the storage requirements of fruits. A higher coefficient of utilization for the storage volume in a modified atmosphere storage results in lower costs for refrigeration and gas adjustment operations.
