A legitimate food factory must not only construct dust-free workshops but also ensure they maintain constant temperature and humidity, as this is fundamental to ensuring food safety. The cleanliness level and sustained stability of controlling pollution in food factory dust-free workshops are the core standards for inspecting the quality of food factories. Whether newly constructed or renovated, food factory dust-free workshops must adhere to national standards and regulations. The area of food dust-free workshops should be proportional to the production scale, and the layout needs to be reasonable.

GMP Considerations for Food Dust-Free Workshop Layout
The interior design and layout of cleanrooms and dust-free workshops should meet the requirements of food safety and hygiene operations, to prevent cross-contamination during food production.
2. Cleanroom factories and clean workshops should be reasonably divided into work areas based on product characteristics, production processes, and the specific cleanliness requirements of the production processes, and effective separation or segregation should be implemented.
3. The area and space of the cleanroom should be proportional to the production capacity, facilitating equipment placement, cleaning and disinfection, material storage, and personnel operation.
4. The design of dust-free factory and workshop engineering is based on the production process, ensuring reasonable layout to prevent and reduce product contamination risks.
5. The inspection room in the dust-free factory should be separate from the production area.
Food-grade Cleanroom Standard
The ISO 14644 standard for cleanroom classification, based on the concentration of suspended particles, categorizes the air cleanliness levels in cleanrooms (zones) and related controlled environments. It focuses solely on the cumulative distribution of particle groups within the size limits of 0.1um to 0.5um. According to particle size, they can be classified into conventional particles (0.1um to 0.5um), ultrafine particles (<0.1um), and macro particles (>5.0um).
The selection and layout of power distribution in the food-grade dust-free workshop comply with the following regulations:
1. Food-grade dust-free workshops should select small-scale power distribution equipment that is not prone to accumulating dust, easy to wipe clean, and has an exterior that is not easily corroded. Large-scale power distribution equipment should not be installed.
2. Select dust-free workshop electrical equipment based on humidity conditions, meeting the requirements for workshop waterproofing, steam resistance, and acidic or alkaline corrosion.
The electrical piping in a food-grade cleanroom should be installed in the technical mezzanine or within it, with the conduit for wiring being non-combustible. The electrical piping and grounding lines connected to equipment within the cleanroom should be concealed.
Electrical conduits and various electrical equipment mounted on walls in dust-free food processing rooms should be sealed at the joints with the walls.
In addition to the aforementioned precautions, there are many aspects to consider in a food-grade dust-free workshop.
The food-grade cleanroom primarily utilizes steel-reinforced or brick structures, with structural designs tailored to the specific requirements of various products.
The layout of a food-grade cleanroom must facilitate the connection between various production stages and ensure easy sanitation control during the processing to prevent cross-contamination during production.
The workshop floor should be laid with non-slip, sturdy, waterproof, easy-to-clean, and corrosion-resistant materials. The purification workshop floor should be level and free of water. The design and construction quality of the entire workshop floor should be slightly higher than that of the factory's floor, with some inclination.
