Heatwave hits Fuzhou, leading to frequent milk spoilage in some supermarkets. According to Fuzhou's Gulou 12315, there have been 8 complaints about food spoilage in recent days, mainly involving milk and yogurt.

Yesterday, journalists randomly tested the temperature of refrigerators in 3 supermarkets within the Gulou District of Fuzhou using a digital temperature gauge, discovering that the temperatures were all insufficient, exceeding the required temperature for dairy products by 2~3℃.

The manager of Yonghui Supermarket's Jingda Store stated that a refrigerator cooler in the supermarket recently malfunctioned and is still under repair. As a result, the refrigerators are left open, and with the high outdoor temperatures, the refrigerator temperatures have consequently risen.

The Food Expert from the Provincial Quality Supervision and Inspection Institute explains that high temperatures can lead to a reduction in active lactic acid bacteria in milk that has been stored for too long. Insufficiently low temperatures in refrigeration for frozen buns, quick-frozen meat products, and other foods can result in exceeding the acceptable total bacterial count, especially for dairy products with high protein content, which are more prone to bacterial growth.
